Our RD Talks American Diabetes Awareness Month

Catherine Sebastian, MS, RD, CDN

Did you know that November was American Diabetes Awareness Month?  We may know someone who has diabetes whether it be a family member, friend, or colleague so let’s work together to eat healthier this month.

Prepping a meal or gathering can seem daunting when you know someone coming has diabetes.  However, with a little education and information it does not have to be overwhelming at all!

The best approach when hosting someone with diabetes is to open the conversation with them about it.  Hearing their nutrition challenges will help you prepare and make them feel comfortable.

Carbs – love or hate them, they provide the body its first source of energy.  Someone with diabetes is not able to metabolize the carbs for energy as efficiently as someone else would.  The best way to eat would be to incorporate a combination of carbs, protein, fat, and also eating less added sugar and processed foods.

When everyone gathers around the table, Libby’s® Canned Fruits & Vegetables wants the meal to be inclusive of everyone, this way it makes for a more memorable and enjoyable experience for all, no matter the health restriction.

Libby’s® Vegetables can be a great option for those with diabetes to add volume, flavor, and texture to dishes without increasing the carbohydrate count.  I wanted to share some great tasting Libby’s® recipes that can be enjoyed on a diabetic diet.

Loaded Beet Hummus served with Libby’s® Sliced Beets

The chickpeas in hummus provide a great balance of carbs and protein.

A fun appetizer that is busting with flavor from cilantro. Recommend for people with diabetes to enjoy as-is or in lettuce cups.
