Fall Spiced Pear Cobbler

2 can (15 oz) Libby’s® Pear Slices (or, Libby’s® Pear Halves (in Pear Juice))
3 tbsp butter
3⁄4 c sugar
1⁄4 c all purpose flour
1⁄2 tsp cinnamon
1⁄4 tsp salt
1⁄2 tsp vanilla extract
1 1⁄2 c all purpose flour
1⁄2 c brown sugar
1 tsp baking powder
1 tsp ground cinnamon
1⁄4 tsp ground ginger
1⁄4 tsp ground allspice
1⁄8 tsp ground nutmeg
1⁄4 c butter
1⁄4 c milk
salt (just a dash, to taste)

To make the filling:

Preheat oven to 350 degrees F.

Melt butter in skillet over medium heat. Add Libby’s® Pear Slices (or Libby’s® Pear Halves), sugar, flour, cinnamon, and salt, and stir to combine.

Continue cooking, stirring frequently, until sugar has dissolved, and mixture is bubbly. Allow mixture to bubble for two or three minutes, or until thickened.

Remove from heat. Stir in vanilla.

Transfer filling to glass baking dish. Set aside and make topping.

To make the topping:

Combine flour, brown sugar, baking powder, cinnamon, ginger, allspice, nutmeg, and salt in medium bowl.

Add butter and mix until butter is about the size of peas.

Add about three tbsp. of milk and continue mixing dough. Add remaining milk, a small amount at a time, and mix just until dough comes together.

Drop dough by tablespoonfuls over top of filling. It may look clumpy at first, but will spread out as it cooks down, so don’t worry if it looks a little odd.

Bake 30 to 35 minutes, or until topping is browned and filling is bubbly.

Serve warm or at room temperature.
