Green Bean Casserole Tartlets

1 tablespoon butter
1/4 cup minced onion
1 tablespoon flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sour cream
1 can (14.5 oz.) Libby's Cut Green Beans, drained
1 cup shredded cheddar cheese, divided
2 sheets thawed puff pastry
1/2 cup french fried onions
Instructions
1. Preheat oven 400°F.
2. Melt butter in large skillet over medium. Add onions, cook 2 minutes. Stir in flour, salt and pepper. Cook, stirring constantly, for 1 minute. Add sour cream, green beans, and half of cheese; stir until well combined and heated through. Remove from heat and set aside.
3. On lightly floured surface, gently roll out each pastry sheet to 9×12 inches. Cut each sheet into 12, 3-inch squares, ending with a total of 24 squares. Lightly score each square about 1/8 inch around the edges and prick liberally with fork. This will keep pastry from puffing up too much during cooking. Transfer pastry squares to 2 parchment-lined baking sheets.
4. Add spoonful of green bean mixture to center of each square and top with remaining cheese.
5. Bake 7 minutes, remove from oven and top each tartlet with fried onions. Return to oven and bake an additional 7 minutes, until pastry is puffed and golden.
