Ham, Cheese and Peach Tortellini Pasta Salad

Serves 10

16 oz Poppyseed Dressing
1 lb cheese tortellini (fresh or frozen)
1 1⁄2 c cooked ham (diced into 1-inch cubes)
16 oz block cheese (diced into small chunks or cubes)
2 c chopped lettuce

Prepare cheese tortellini according to package directions.

Drain tortellini and rinse with cool water, just to cool off slightly.

Combine poppyseed dressing with 4 tbsp. of the juice from can of Libby's® Peach Slices in bowl or mason jar. Then drain rest of juice from Libby's® Peach Slices. If preferred, slice Libby's® Peach Slices in thirds to make more bite-sized.

Stir dressing together well. Or, if using mason jar, screw lid on and shake well.

Combine cooked tortellini, diced ham, cubed cheese and Libby's® Peach Slices in large bowl.

Pour poppyseed dressing over salad. Stir well.

Finally, stir in chopped lettuce and gently stir.

Serve immediately. Or cover with plastic wrap and refrigerate; serve within 24 hours.
