Rice Pilaf with Peas

Ingredients

can
(15 oz.) Libby’s® Sweet Peas
(undrained)
4
tbsp
unsalted butter
2
shallots
(minced)
1
c
brown rice
2
tsp
chopped parsley
1⁄4
tsp
black pepper
1
c
chicken broth
Instructions
Heat butter in saucepan. Add shallots; sauté until softened, about 5 minutes. Add rice, stirring to coat and glaze. Add parsley, pepper and broth. Stir and bring to boil. Reduce heat, cover and cook about 45 minutes. Heat Libby’s® Sweet Peas in separate saucepan; drain and mix with rice.
