Rice Pilaf with Peas

Ingredients

  • 1 cn (15 oz) Libby’s® Natural Pack Peas, undrained
  • 4 tbsp Unsalted butter
  • 2 Shallots, minced
  • 1 c Brown rice
  • 2 tsp Chopped parsley
  • 1⁄4 tsp Black pepper
  • 1 c Chicken broth

Instructions

Heat butter in saucepan. Add shallots; sauté until softened, about 5 minutes. Add rice, stirring to coat and glaze. Add parsley, pepper and broth. Stir and bring to boil. Reduce heat, cover and cook about 45 minutes. Heat peas in a separate saucepan; drain and mix with rice.
