Baked Succotash


If succotash is not readily available to you, feel free to use a mixture of Libby's® Whole Kernel Sweet Corn, Libby's® Lima Beans and Libby's® Dark Red Kidney Beans as a substitute.


Serves 4

1 can evaporated milk (12 oz.)
1 c monterey jack cheese shredded
2 eggs beaten
1⁄4 c onion diced
1⁄4 c red bell pepper diced
1⁄4 ground pepper
1⁄2 c saltine crackers crumbled
1⁄4 c bread crumbs

In large bowl, combine succotash, evaporated milk, cheese, eggs, onion, bell pepper, pepper and crackers. Place in 2-qt. casserole dish; sprinkle bread crumbs over mixture. Bake at 350° F for 50-60 minutes. Let stand 5 minutes before serving.
