Black Bean and Bacon Veggie Bites

Makes 36 bites

Ingredients
2 can (15 oz.) black beans (drained and rinsed)
1⁄2 lb bacon (cooked until crispy and crumbled)
1 small onion (finely diced)
2 clv garlic (finely diced)
2 tbsp olive oil
salt and pepper (to taste)
2 tsp curry powder
heavy cream
small square wonton wrappers
Instructions

In big skillet, add olive oil, onion and garlic. Cook over medium heat until onion is transparent. Be careful not to burn garlic.

Add in Libby’s® Mixed Vegetables, beans and bacon. Season with salt and pepper and curry powder. Stir well and cook for minute or so; you do not want vegetables to get mushy.

Add heavy cream, just enough for filling to bind well and create smooth creamy consistency. Remove from heat.

Add a little less than a teaspoon of filling to each wonton square. Use water to wet edges and fold into triangle, adding a little more water as necessary to keep wrapper from opening. Fry in vegetable oil until golden brown. Drain on paper towels.
