Black Bean and Bacon Veggie Bites

In a big skillet, add olive oil, onion and garlic. Cook over medium heat until onion is transparent. Be careful not to burn the garlic.
Add in the Mixed Vegetables, beans and bacon. Season with salt and pepper and curry powder. Stir well and cook for a minute or so; you do not want the vegetables to get mushy.
Add heavy cream, just enough for the filling to bind well and create a smooth creamy consistency. Remove from heat.
Add a little less than a teaspoon of the filling to each wonton square. Use water wet the edges and fold into a triangle, adding a little more water as necessary to keep the wrapper from opening. Fry in vegetable oil until golden brown. Drain on paper towels.
