Corn and Pea Fritters with Cilantro Lime Dipping Sauce

Serves 5

1 can (15 oz.) Libby’s® Sweet Peas drained and washed
2 tbsp onion minced
1⁄4 ds all-purpose flour
1⁄4 c parmesan cheese
1 egg
1⁄4 tsp salt
1⁄2 tsp black pepper
vegetable oil spray
5 3⁄10 oz container of 0% plain greek yogurt
1 avacado
juice of ½ lime
1 1 jalapeno minced
1 c ¼ c cilantro leaves

Corn and Pea Fritters

Combine corn, peas, onion, flower, cheese, egg, salt and pepper in a large bowl. Mix to combine.

Lightly coat sauté pan turned on medium heat with vegetable oil. Spoon ¼ cup of mixture on pan, press to flatten. Cook each fritter for 2-3 minutes on each side or until golden brown.

Cilantro Lime Dip 

Combined Greek yogurt, avacado, lime juice, jalapeno and cilantro leaves in a food processor and process until smooth.
