Cowboy Caviar

Ingredients

  • 1/4 cup olive oil

  • 1/4 cup lime juice

  • 1 teaspoon garlic powder

  • 2 teaspoons cumin

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 can (15.25 oz.) Libby's Whole Kernel Sweet Corn, drained

  • 2 cans (15 oz.) black/white/pinto beans, drained

  • 6 roma tomatoes, diced

  • 2 avocados, diced

  • 1 cup cooked rice

  • 3 jalapeno peppers, seeded and minced

  • 1 small red onion, diced

  • 1/4 cup chopped fresh cilantro

Instructions

1. In large bowl, whisk together oil, lime juice, garlic, cumin, salt and pepper.

2. Add corn, beans, tomatoes, avocados, rice, jalapenos, onions, and cilantro. Mix together until well combined. Serve with tortilla chips.
