Cowboy Caviar

Serves 12 

2 avocados chopped
3 roma tomatoes chopped
1⁄4 c purple onion chopped
1 can beans (white, black, garbanzo, or black eyed peas), drained and rinsed
1⁄2 c cilantro chopped
1⁄4 c chia (optional)
1⁄4 tsp chili powder
salt and pepper to taste
juice from 2 limes

Toss together corn, avocados, tomatoes, onion and beans.  

Toss in chia, chili powder, salt, pepper, and juice.

Serve at once or put in air tight container in the fridge.
