Cuban Black Bean Soup

Ingredients
- 1 T Olive oil
- 1 c cooked ham, diced
- 1 c Chopped onion
- 2 t Ground cumin
- 1 cn 15 oz libby's black beans (do not drain)
- 2 c chicken or vegetable broth
- 2 T freshly squeezed lime juice
- 2 T chopped cilantro
- 1 salt and hot pepper sauce
Instructions
In large saucepan, heat oil over medium heat. Add ham; cook until browned, stirring occasionally. Remove ham with slotted spoon. Add onion, garlic and cumin to same saucepan; cook, stirring occasionally, about 5 minutes or until onion is translucent. Add black beans and and broth; bring to a boil. Reduce heat; simmer 10 minutes. In blender, purée 1 cup of the soup until smooth; pour back into saucepan. Add lime juice, cilantro and ham; season with salt and hot pepper sauce.
