Easy Peach Crisp

Serves 8

3⁄4 tsp cinnamon
2 tsp all purpose flour
3⁄4 c all purpose flour
1⁄2 c oats
1⁄2 c light brown sugar packed
1 tsp cinnamon
6 tbsp butter

Preheat oven to 350 degrees.

For the filling:
Drain Libby’s® Peach Slices and place in a bowl with cinnamon and flour. Toss to coat. Set aside.

For the topping:
Place flour, oats, brown sugar and cinnamon in a large bowl. Stir with a whisk to combine. Cut butter into 1/2″ squares and add to flour mixture. Use your hands to work butter into the mixture until it is crumbly and well combined. Set aside.

Place about 2 tablespoons of the topping in the bottom of a 9×12 baking dish. Spread filling mixture evenly over the bottom of the pan. Cover evenly with the topping mixture.

Bake at 350 degrees in the middle of the oven for 40-50 minutes, or until the filling is bubbly and the topping is lightly browned.

Let cool slightly before serving. Top with vanilla ice cream if desired.
