Fruit and Oat Snack Bars


Makes 12 servings

These whole grain, kid-approved snack bars are ideal for lunchboxes or afternoon snacks. Libby’s® Apricot Halves add natural sweetness and fruity flavor or you can swap in Libby’s® Pear Halves or Peach Slices if you prefer. These bars are freezer-friendly, too!

cooking spray
3 c old fashioned oats
2 tsp baking powder
1 tsp cinnamon
1⁄4 tsp salt
1⁄2 c plain greek yogurt
1⁄4 c nonfat milk
1⁄4 c vegetable oil
1⁄4 c brown sugar
2 eggs
1⁄2 tsp vanilla extract
3⁄4 c golden raisins

Preheat oven to 350 degrees F. Prepare an 8x8-inch baking pan with cooking spray.

In a large bowl, mix together oats, baking powder, cinnamon and salt. Set aside.

Add drained apricots to a food processor or blender. Puree until the apricots are smooth. Add pureed apricots to another bowl. Whisk in yogurt, milk, oil, brown sugar, eggs and vanilla extract.

Add apricot mixture to oat mixture and mix until just incorporated. Gently mix in raisins.

Pour into baking pan and bake for 30 - 35 minutes or until bars are just turning golden brown. Cool in pan for 20 – 30 minutes before cutting into 12 bars.
