Mediterranean Salad Pita Wraps

Servings: 4 Pita Wraps

A delicious take on pita wraps using a fresh chopped salad with a refreshing dressing!

Ingredients
1⁄2 c Chickpeas
1⁄2 c chopped cucumber
1⁄3 c feta cheese crumbled
2 tbsp red onion finely chopped
1 Artisan lettuce chopped
2 c Kumato tomatoes slices
1⁄4 c olive oil
1⁄4 c lemon
1 tbsp red wine vinaigrette
1⁄2 c sour cream or greek yogurt
1 tsp dried mint
1⁄2 tsp garlic powder
salt and pepper to taste
4 round pitas or gyro bread
Instructions

1. Assemble the salad in a bowl and mix the dressing ingredients together. Pour dressing over salad and mix.

2. Soften your pita or gyro bread on the stove top by heating for 1 minute on each side. Scoop salad into pita bread and roll into a wrap.

3. Enjoy!
