Mixed Fruit Pizzas
Makes 4 pizzas
Drain Libby’s® Fruit Cocktail into bowl and save 1 tablespoon of juice. Set aside.
In small bowl, mix together sugar and cinnamon. Set side.
In another small bowl, beat together yogurt, cream cheese, 1 tablespoon of reserved juice, 1 teaspoon of cinnamon sugar mixture and vanilla extract until smooth.
For each pizza, spread 2 tablespoons of yogurt/cream cheese mixture over half of toasted English muffin. Top with ¼ cup fruit cocktail and sprinkle with ½ teaspoon of remaining cinnamon sugar. Repeat with remaining 3 halves and serve immediately.
