Mixed Fruit Pizzas


Makes 4 pizzas.

In less than 10 minutes, you can create these sweet, mini pizzas for an after-school snack or a healthy dessert. Use any Libby’s Fruit you have on hand. Don’t forget to save some of the juice to flavor the ‘sauce’!

1 tbsp sugar
1⁄4 tsp cinnamon
1⁄4 c nonfat plain greek yogurt
1⁄4 c 1/3 less-fat cream cheese (neufchâtel cheese) softened
1⁄2 tsp vanilla extract
2 whole wheat english muffins toasted

Drain Libby’s® Fruit Cocktail into a bowl and save 1 tablespoon of the juice. Set aside.

In small bowl, mix together sugar and cinnamon. Set side.

In another small bowl, beat together yogurt, cream cheese, 1 tablespoon of reserved juice, 1 teaspoon of the cinnamon sugar mixture and vanilla extract until smooth.

For each pizza, spread 2 tablespoons of yogurt/cream cheese mixture over half of a toasted English muffin. Top with ¼ cup fruit cocktail and sprinkle with ½ teaspoon of remaining cinnamon sugar. Repeat with remaining 3 halves and serve immediately.
