Mom's Winter Stew

Ingredients

  • 2 tablespoons olive oil

  • 1 pound stew meat

  • 1 onion, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 can (12 oz.) tomato sauce

  • 2 cups beef broth

  • 2 cans (15 oz.) Libby’s Sliced White Potatoes, drained

  • 1 can (14.5 oz.) Libby’s Sliced Carrots, drained

Instructions

1. In soup pot, heat oil over medium-high. Add meat and onion, then sprinkle with salt and pepper. Cook 5 minutes, browning meat on all sides.

2. Add tomato sauce, broth, potatoes and carrots. Bring to boil, then reduce heat and simmer 10 minutes.
