Pear and Colby Panini


Makes 6 sandwiches

12 sli whole grain bread
6 sli slices colby cheese
1 c baby spinach leaves
6 tbsp pecan halves
1⁄4 c dijon mustard
1 tbsp honey
6 tsp unsalted butter

Slice pears into ½-inch strips.

To assemble sandwiches, start with one slice of bread. Add one slice of cheese and place 3 -4 pear strips on top. Next, add a few spinach leaves and top with 1 tablespoon of pecans.

In a small bowl, whisk together mustard and honey. Spread about 2 teaspoons honey mustard on another slice of bread and place on top of pecans to complete the sandwich.

Preheat your grill, griddle or panini maker to medium (or use a frying pan over medium heat.) Melt 1 teaspoon butter, then add sandwich and cover with lid (or place another small frying pan on top of sandwich while cooking to weigh it down.)

Cook for about 5 minutes or until bread starts to get golden brown and cheese is melted (if using a frying pan, cook for 3 minutes on one side then flip and cook an additional 2 – 3 minutes.) Remove from pan. Repeat with remaining ingredients to make a total of 6 sandwiches.
