Pear Brie Prosciutto Grilled Cheese

Serves 1

Prep time: 5 min. 

Cook time: 10 min. 


1 tbsp thinly sliced onions (about 1/8 of small onion)
1 tsp olive oil
1⁄8 tsp salt
1⁄8 tsp ground ginger
ground pepper to taste
2 sli good quality bread
1 sli prosciutto (thin)
4 sli brie (thin)

Heat olive oil in small saucepan over medium heat. Once hot, add onions and cook until soft and translucent, about 5 minutes.

Drain can of (15 oz.) Libby's® Pear Halves, keep juice and set aside.

Add 2 tablespoons of  pear juice to pan, then add drained pears. Break pears up with spatula.  Add salt, ginger and pepper and stir well.

Bring to boil over medium-high heat, then reduce heat to medium-low, making sure to maintain simmer. Simmer for about 15 minutes, stirring occasionally and smashing up the pears each time you stir. Final consistency should be saucy with lumps.

Heat separate frying pan over medium heat about 5 minutes.

While pan is heating up, spread pear sauce on 1 slice of bread.

On second slice of bread, place the brie slices evenly to cover then top with prosciutto.

Put the sandwich together, then butter top of bread.

Place sandwich butter side down in pan, then butter other side (that is now facing up). Cook sandwich over medium heat until both sides are golden brown.
