Quick and Healthy Fried Quinoa with Mixed Vegetables

Serves 2

1 c quinoa
1 tsp extra virgin olive oil
1⁄4 c low sodium soy sauce
1 tsp ginger peeled and finely grated

Cook quinoa according to package directions. Set aside.

Heat olive oil in a large skillet over medium heat. Add soy sauce, ginger, and mixed vegetables to skillet.  Cook while stirring occasionally until vegetables are heated through. Add cooked quinoa to skillet and stir to combine. Cook for 2-3 more minutes, or until quinoa is heated through. Serve warm.
