Quick & Easy Lower-Sugar Peach Crisp

Serves 4

2 tbsp ginger (chopped)
1⁄2 c rolled oats
1 tbsp coconut oil (melted)
1 tsp vanilla extract
1 tsp honey (or maple syrup)
1⁄4 tsp ground ginger
1⁄4 tsp ground cinnamon
sea salt

Preheat oven to 400 degrees F.

Pour Libby’s® Peach Slices into baking dish. Mix in chopped ginger and set aside.

In small bowl, mix together remaining ingredients to make topping.

Spread oat mixture over peaches.

Place dish in oven and bake for 30 minutes, or until oats have begun to brown and fruit is bubbling.

To serve, pair with your favorite whipped topping or enjoy with plain yogurt for a breakfast-appropriate twist.
