Skillet Chicken Pot Pie Pasta

Ingredients

(15 oz.) Libby's Mixed Vegetables
(drained)

penne pasta

unsalted butter

small yellow onion
(minced)

celery stalk
(finely chopped)

poultry seasoning
1⁄2
tsp
salt
1⁄4

all-purpose flour

c
chicken broth

c
diced cooked chicken breast
Instructions
In large pot of boiling salted water, cook pasta 3 minutes less than package instructions.
Meanwhile, melt butter over medium-high heat in large saucepan. Add onion, celery, seasoning, and salt. Cook until onion is translucent, about 4 minutes. Add flour and cook, stirring, 1 minute. Gradually add broth, stirring constantly, then bring to a boil. Reduce heat and simmer 5 minutes, stirring throughout.
Add Libby's® Mixed Vegetables and cooked chicken, and combine with sauce.
Drain pasta and add to skillet, toss to combine.
