Spicy Chicken Lettuce Wraps

Scoop, roll and enjoy this spicy twist on the typical sandwich wrap. With a quick zap in the microwave, Libby’s heated vegetable pouches add flavor, color and nutrition to the chicken salad mixture making an easy yet creative weeknight meal that the whole family will love!

Makes 6 servings

Ingredients
1 lb cooked chicken breast diced (about 2 1/3 cups)
2 large scallions diced (about ¼ cup)
1⁄3 c almond slivers
1⁄3 c plain nonfat greek yogurt
1⁄3 c mayonnaise made with olive oil
2 tsp sriracha sauce
1⁄4 tsp ground ginger
12 romaine lettuce leaves
sriracha sauce for serving
Instructions

In a large bowl, mix together chicken, green beans, corn, scallions and almonds.

In a separate bowl, mix together yogurt, mayonnaise, 2 teaspoons Sriracha and ginger. Gently fold yogurt sauce into chicken mixture until well incorporated.

Scoop about ⅓ cup of chicken mixture onto a romaine lettuce leaf. Repeat until all twelve leaves are filled. Drizzle with extra Sriracha sauce, if desired, and serve.
