Vanilla Pear Walnut Bread


Serves 8

1 1⁄4 c all-purpose flour
3⁄4 c toasted wheat germ
2 tsp baking soda
1 1⁄4 c sugar
1 1⁄2 tsp ground nutmeg
3 eggs
1⁄4 c canola oil
2 tsp vanilla extract
1⁄2 c walnuts (chopped)

Preheat oven to 350 degrees F. Coat 9x5x3-inch loaf pan with cooking spray.

Mash about 6 Libby’s® Pear Slices with a fork (enough to fill ½ cup) in small bowl. Set aside.
Chop remaining Libby’s® Pear Slices to measure 1½ cup of diced pears; set aside.

In large bowl, whisk together flour, wheat germ, baking soda, sugar and nutmeg. In another bowl, whisk together ½ cup mashed pear, eggs, oil and vanilla. Pour egg mixture into the flour mixture; stir until blended. Fold in nuts and 1½ cup diced pears. Pour batter into prepared loaf pan. Bake for 1 hour or until toothpick inserted in center comes out clean (top of bread will appear dark).
