Vanilla Pear Walnut Bread

Description
This spiced bread makes a delicious gift – or two; bake it in a standard loaf pan or two mini loaf pans. Canned pears naturally sweeten each bite and make the bread super moist.
Ingredients
- 2 cn (15 ounce) Libby’s® Pear Slices, drained
- 1 1⁄4 c all-purpose flour
- 3⁄4 c toasted wheat germ
- 2 t baking soda
- 1 1⁄4 c sugar
- 1 1⁄2 t ground nutmeg
- 3 egg
- 1⁄4 c canola oil
- 2 t vanilla extract
- 1⁄2 c walnuts, chopped
Instructions
Preheat oven to 350°F. Coat a 9x5x3-inch loaf pan with cooking spray.
In a small bowl, mash about 6 pear slices with a fork (enough to fill ½ cup). Set aside.
Chop remaining pears to measure 1½ cup of diced pears; set aside.
In a large bowl, whisk together flour, wheat germ, baking soda, sugar and nutmeg. In another bowl, whisk together ½ cup mashed pear, eggs, oil and vanilla. Pour the egg mixture into the flour mixture; stir just until blended. Fold in nuts and 1½ cup diced pears. Pour the batter into prepared loaf pan. Bake for 1 hour or until toothpick inserted in center comes out clean (top of bread will appear dark).
