Vegetable Fried Rice


Serves 4

3 c cooked leftover rice
2 oz eggs , lightly beaten
3 tbsp peanut oil
3 oz scallions , thinly sliced
1 tsp minced fresh garlic
3 tbsp soy sauce
2 tbsp sesame oil

Heat 1 tbsp. oil in sauté pan. Pour egg into pan and swirl to cover the bottom. Cook until set, like a thin pancake.

Remove and cool on plate. Cut up egg into pieces. Wipe pan and add the remaining peanut oil. Add scallions and cook for 1 minute. Add ginger and cook for another minute. Add rice, soy sauce, sesame oil and coat, cook for 2 minutes. Add the (14 oz.) pouch Libby's® Mixed Vegetables and (14 oz.) pouch Libby's® Sweet Peas and egg, cook for 2-3 minutes. If too dry, add more soy sauce. Serve with toasted sesame seeds if desired.
