Vegetable Sausage Soup


Serves 10

1 lb hot or sweet italian sausage
1 cup green peppers diced
1 cup onions diced
1⁄2 tsp dried basil
1⁄2 tsp dried oregano
1⁄2 tsp ground marjoram
salt and pepper to taste
2 (14 oz.) cans chicken broth
2 (14.5 oz.) cans stewed tomatoes
parmesan cheese (optional)

Remove sausage from casing and place in large pan; add onion, green pepper, and spices. Cook over medium heat until thoroughly cooked; breaking sausage up with a spoon into small bite-sized chunks. Add chicken broth and stewed tomatoes (breaking up tomatoes into small chunks). Add cut green beans, sliced carrots, and potatoes; bring to boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.

Spoon soup into bowls and top with Parmesan cheese, if desired.
