Vegetables Au Gratin

Makes 6-8 servings

Ingredients
2 tbsp butter
1 small yellow onion diced
1 tbsp flour
4 oz cream cheese softened
1⁄2 c apple or white grape juice
salt and pepper to taste
1⁄3 c fresh basil leaved thinly sliced
2 c cheddar cheese grated
Instructions

Preheat oven to 375° F.

In a small sauce pan, melt butter over medium heat.  Add diced onion and sauté for 5 to 7 minutes, or until soft and golden. Reduce heat to low and stir in flour and cream cheese. Mix until creamy. Stir in juice and season to taste with salt and pepper. Let simmer for 2 to 3 minutes, or until mixture resembles a creamy sauce. Remove from heat.

In a large bowl, combine vegetables and basil with cream sauce, stirring gently until vegetables are well coated. Pour into a 2 qt. baking dish.  Top with cheese and bake for 20 minutes.  When the mixture is bubbly and cheese is melted, turn oven to broil and cook for an additional 3 to 5 minutes or until cheese is lightly browned. 

Remove from oven and serve warm.
