Ingredients
For Dressing:

olive oil

salt

pepper

cumin

granulated garlic
1⁄4

minced garlic
juice from 1 lime

chia
(optional)
For Salad:

can
(15 oz.) Libby’s® Whole Kernel Sweet Corn
(drained)

can
beans
(white, black, garbanzo, or black-eyed peas; drained and rinsed)

roma tomatoes
(chopped)
1⁄2
c
cilantro
(chopped)

avocados
(chopped)

green onions
(cut up small)

brown rice, buckwheat, and quinoa
(optional)

Instructions
Mix all ingredients for dressing together. Set aside.
Mix Libby’s® Whole Kernel Sweet Corn, vegetables, beans, and rice mixture together. Then gently stir in dressing.
Allow vegetables, rice, and beans to sit to pick up flavors of dressing.
Serve at once or put in air tight container in the fridge.
