Almond Pear Crisp

1 tsp cinnamon (divided)
1⁄4 c oats
2 tsp maple syrup
1 tbsp almond butter
2 tbsp almonds (chopped)
1⁄4 c full-fat coconut milk (chilled)
1 tbsp powdered sugar

Preheat oven to 375 degrees F.

Drain and dice Libby’s® Pear Halves. Toss pears with ½ teaspoon cinnamon in small bowl. Evenly distribute pears into two oven-safe ramekins.

Combine remaining ½ teaspoon cinnamon, oats, maple syrup, almond butter and almonds in small bowl. Mix until combined, creating crumbly texture. Add crumble on top of pears in ramekins.

Bake in oven for 10 minutes, until crumble begins to brown.

As pear crisps are baking, beat coconut milk and powdered sugar until fluffy.

Remove pear crisps from oven and top with coconut whipped cream. Serve warm.
