Apricot, Bacon and Ginger Mini Cobblers

Serves 4

1 can (15 oz.) Libby’s® Apricot Halves (in Pear Juice) (drained and quartered, reserving 1/4 cup juice)
2 sli bacon (cooked and uncured; diced and divided)
1⁄2 tsp ground ginger
2 tbsp butter (softened)
1⁄4 c sugar
1 egg
1⁄2 tsp vanilla
1⁄2 c all-purpose flour
1⁄2 tsp baking powder
1⁄2 tsp salt
1⁄4 c milk
frozen yogurt, mint or reserved bacon (optional garnish)

Preheat oven to 350 degrees F.

In small bowl, mix together quartered Libby’s® Apricot Halves with reserved juice, ½ bacon pieces, and ginger.

Place ramekins on a baking sheet. Divide apricot mixture between four ramekins. 

In small bowl, add butter, sugar, egg and vanilla and mix together. Add flour, baking powder, salt, and milk. Stir together until just combined. Divide batter between ramekins on top of apricot mixture.

Bake for 25 minutes or until browned on top. Allow to cool and garnish with optional toppings.
