Pea, Ricotta and Bacon Salad

(15 oz.) Libby’s® Sweet Peas
(drained)

sli
boar's head fully cooked microwaveable bacon
1⁄4
c
part skim ricotta cheese
(crumbled)
2
tbsp
chives
(chopped)
1⁄2
tsp
basil salt and pepper to taste
Instructions
Microwave peas for 2 minutes, set aside.
Microwave bacon for 25 seconds, or until cooked. Chop bacon once it has cooled.
In a serving bowl add peas, bacon, ricotta, chives and basil. Sprinkle in salt and pepper to taste.
Gently toss to mix. Serve warm or at room temperature.
