Pantry ingredients: uses & substitutions
A useful pantry is built around food you know how to use. These are independent ingredient guides, not a shop or a current manufacturer catalogue.
Canned sweet corn
Drain whole-kernel corn for salads, fritters and quesadillas. Cream-style corn contains liquid and pulp and cannot be swapped one-for-one in every bake.
Pantry guideCanned and frozen peas
Canned peas are already cooked and softer than frozen peas. Add them near the end of cooking. Frozen peas need cooking according to the packet.
Pantry guideCanned and fresh carrots
Canned carrots are already cooked. Use fresh carrots when a dish needs roasting, crunch or structure; add drained canned carrots late in soups or mash.
Pantry guideCanned and fresh green beans
Canned green beans are softer and already cooked. Fresh beans need trimming and cooking; frozen beans should follow their packet directions.
Pantry guideCanned sliced potatoes
Canned potatoes are cooked and convenient for a quick skillet or egg dish. Drain and pat dry before browning so excess liquid does not steam them.
Pantry guideCanned pears
Pears packed in juice and pears packed in syrup have different sweetness. Drain for baking; taste before adding sugar. Can size is not the same as drained fruit weight.
Pantry guideCanned peaches
Drain canned peaches for topping yogurt or baking. Fruit in juice and syrup differs in sweetness; adjust added sugar to the actual fruit, not the old package description.
Pantry guideCanned apricots
Canned apricots bring soft fruit and a lightly tart flavour to breakfast bowls and simple desserts. Drain well and cut to similar-sized pieces.
Pantry guideCanned mixed vegetables
A can of mixed vegetables can shorten soup or rice preparation. The mix varies, so check the label and drain it before adding to a dish.
Pantry guideCanned fruit cocktail
Fruit cocktail varies in fruit mix, packing liquid and sweetness. Drain for yogurt, breakfast bowls or a simple dessert. Check the label rather than assuming all cans are the same.
