Make aheadA beginner’s freezer plan
Start with two adaptable meals and label every portion.
Your freezer routine
| Step | What to do |
|---|---|
| Cool | Use shallow containers; refrigerate promptly rather than leaving a large pot on the counter. |
| Portion | Freeze meal-sized amounts in freezer-safe containers with room for expansion. |
| Label | Write the dish, date and number of portions on every container. |
| Rotate | Put newer meals behind older ones and include a freezer night in your plan. |
| Thaw | Use the refrigerator, or microwave immediately before cooking/reheating. Do not thaw on the counter. |
Keep your freezer at 0°F/−18°C or below and your fridge at 40°F/4°C or below. Frozen food kept continuously at that temperature stays safe indefinitely, but quality declines; suggested freezer times are quality guides, not guarantees about poorly handled food. See the official cold-storage chart.
